Other Common Names: Pondicherry Curry Powder.
Description & Use: Just as the English created a Madras Curry to their liking, the French who colonized the Pondicherry area of eastern India, took a liking to the local flavours and made this version their own. A larger-than-usual leaning towards dried onion and garlic, and the freshness of curry leaves, makes this blend mild and a little sweet.

An Indian version of ‘5 spices’, panch phora adds flavour to curries & Indian recipes.
Other Common Names: Panch Phoron, Panch Poron, Panch Puran, Panch Phoran and Panch Phutana.
Description & Use: Panch Phora is a special blend of five seed spices, said to be of Bengali origin, a five spice blend that should not be confused with Chinese Five Spice Powder. The name comes from the Hindustani word for five which is ‘panch’ and ‘phora’ simply means seeds. Panch Phora is traditionally fried in oil at the commencement of making a curry. It is also delicious when fried with partially cooked potato cubes until they are golden brown, and the seeds have stuck to them.

Garam Masala
A ubiquitous spice blend, used mainly in Indian cooking, that gives flavour to dishes without adding heat.
Description & Use: Garam means spices, and masala refers to a mix. Thus Garam Masala is a very special blend of spices used in Indian cooking, in much the same way as Europeans may add Mixed Herbs to everyday meals. Garam Masala adds flavour to curries and is often sprinkled over the surface of a simmering curry, where during slow cooking, the spice mixture contributes a rich flavour that would not otherwise be present. Garam Masala adds spice to food in a mild way, and without the distinct cumin notes of curry. Garam Masala mixed with a little chilli powder and salt and sprinkled over fish before barbecuing, frying or grilling is a south Indian delight.
